TURKEY-MUSHROOM MEATLOAF

Method:
Saute the minced mushrooms, shallots, garlic and jalapeno (optional) in oil five minutes on medium heat until mushrooms have released liquid. In a large bowl, combine turkey, breadcrumbs, worchestershire sauce, gravy maker, cooked mushroom mixture, egg and herbs. Form into a loaf and place in an oiled loaf/baking pan. Bake at 350 degrees for about an hour.
Serves 4-6.

- 1 1/4 lbs. lean ground turkey breast
- 12 oz. mushrooms, finely minced
- 1/3 cup shallots, finely minced
- 1 large garlic clove, finely minced
- 1 tbsp. canola oil
- 1/2 cup plain breadcrumbs
- 1 egg or 1 egg white
- 1 tbsp. worchestershire sauce
- 1 tbsp. gravy maker (i.e. Kitchen Bouquet)
- 1 tbsp. dried marjoram
- 2 tsp. dried thyme
- 1 fresh seeded jalapeno pepper, minced (optional)
- salt and pepper to taste
